Ingredients:
4 baked sweet potatoes or garnet yams, cooled
8 t Chia seeds mixed with 16 t water (let the seeds soak 5-6 minutes before using)
1 T dijon mustard
3/4 hot sauce (if you want)
1/2 t sea salt
1/4 black pepper
1/2 cup shredded Yves Vegetarian "pepperoni" (optional)
1/4 c finely chopped baby kale
2 T finely chopped green onion
Directions:
Preheat the oven to 350 F
Slice off the top of each potato and scoop out the middle, leaving enough inside to let the potato hold its shape (set the scoops aside to use later as a mashed sweet potato side dish for tomorrow's dinner)
In a bowl, mix the chia and water, mustard salt, pepper, kale, and, if using, the hot sauce and Yves Vegetarian "pepperoni." Spoon the mixture into the potatoes and top with green onion
Bake 30 minutes.
