
You will need:
1. A cauliflower pizza crust. Trader Joe's makes a good, inexpensive one you can find in their frozen food section or you can make your own! For how to make your own, click here.
2. Spaghetti sauce
3. Veggies of your choice: I use sliced onions, sliced multicolored bell peppers, olives, and various kinds of sliced mushrooms (my significant other uses Smart Life vegan pepperoni or vegan chorizo with diced pineapple on his, along with lemon, olive oil, dill and arugula; you can try all kinds of healthy options!)
4. Cashew Cream (the cheese part): for this you'll need 2 cups of raw cashews that have been soaked overnight in filtered water, 2 T chickpea miso paste, 1 T coconut oil, 1/4 c nutritional yeast, 1/2 t Celtic sea salt, 1 T fresh lemon juice, and 1 c boiling water. Combine all those ingredients in a blender and then smother your tasty pizza with it.
I put the tomato sauce and veggies on my cauliflower crust, bake it and then, after it is out of the oven, smother it with the warm cashew cream sauce and then throw on some dill and other herbs to taste. It's heaven.
My significant other prefers to put his cashew cream on the crust first, add his toppings and then bake it all at once. It creates a different (but equally delicious) texture. Try both ways and see which way you like! If you have extra of the cashew cream, use it as a dip for nacho chips. Tasty goodness and, not only is it lactose-free and cruelty-free, the cashews are rich in zinc (good for your skin) and vitamins E, K, and B6, along with minerals like copper, phosphorus, magnesium, iron, and selenium, all of which are important for maintaining good bodily function.
